No Bake Bacon Cheese Dip

(For the Angry Gremlins in your house)

So here you are planning out your meals for the week or even longer, you are reading a bunch of cooking blogs’ and you are looking for Fast, Easy, Tasty! Right? Just like the rest of us! Well if your family and friends are like mine they bring their appetite (and opinions’ since they too read cooking blogs’!) to the house about 30 minutes to an hour before dinner time. And if you have kids, a grumpy spouse or as we call them in our house, people who turn into “angry gremlins” when they are hungry, then this is the blog for you!

The key to this cooking blog is Timing. You need to keep those people busy while they have a little pre-dinner snack; or as some still call them, an appetizer! Think of it as an “Appe-Teaser” enough to keep the gremlins down and make dinner worth while.

Don’t let those butts sit idly by while you cook! They should be helping with dinner, setting the table (yes I said that). Doing something that keeps them from just sitting and filling up on the appetizer! Busy hands, a little munch now and then and time flies by. It also keeps the “main cook” from feeling taken for granted!

Isn’t it nice when the entire house sits down together to eat? Have the little ones’ help out too, keep them involved. Keeps the faces out of the phones! There is no memory better than helping get dinner together as a child. Learning about the little things helps grow a mind also.

So one of the things that I do in our home (with help). Is to pull out a package (or two) of bacon and cut the strips in half and then cook them off. Honestly I tend to do it more alone, because less gets eaten during the cooling process! LOL! Once it is totally cool, I put it in freezer bags and freeze it. Then when I need bacon for anything, like a recipe or even a sandwich, it reheats easy and fast.

So this recipe is great on vegetables, chips, crackers, garlic toast, pretty much anything you want dip on. It is a “go-to” type of dip, make ahead, garnish for a party with vegetables, bread crumbs, cheese or bacon crumbles and done deal.

BACON CHEESE DIP RECIPE

INGREDIENTS

  • 6 oz cream cheese, softened
  • 3/4 c. sour cream
  • 1/2 c. mayonnaise
  • 1/2 tsp dried mustard powder
  • 1 tsp minced garlic or garlic powder
  • 1/4 tsp salt (optional)
  • 1/2 tsp black pepper
  • 10-12 slices of bacon, well cook and crumbled up
  • 2 c. sharp cheddar cheese
  • 3 green onion finely diced
  • 1/2 c. finely diced pepperoncini peppers
  • 1/2 c. finely chopped nuts of your choice (optional)
  • To spice it up, add 1 tsp. Tajin seasoning or Sazon seasoning and finely diced jalapeno’s.

DIRECTIONS

  • Add all ingredients into large mixing bowl
  • Use a wooden spoon or stiff rubber spatula to combine well
  • Cover and refrigerate 90 minutes or more before serving. (great to make the day ahead)
  • Best when made the day ahead and stirred and garnished before serving

So, it doesn’t get much easier than that. With this dip, we tend to make it either when we are prepping a few meals or at night when we are cleaning up from dinner and then the dishes (mostly measuring cups and spoons) go right in with the dinner dishes before coffee. Then it gets covered and put in the refrigerator and is good for a few days. Now I have time to change into a cute outfit!

If you make this for a party, put it in a pretty bowl and garnish. The family tends to get it in the container I put it in the fridge. That way no extra mess and good for several times. This is a very popular dip around here, but then it does have garlic and bacon in it so what is not to like? I like it on everything from carrots and cucumbers to my “OH SHIT CHIPS” as family and friends call them. (There is a Youtube video all about that crazy subject).
